Ingredients:
- 250 g all-purpose flour
- 1.5 teaspoons baking powder
- 0.5 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cardamom
- Zest of 1 orange
- 114 g unsalted butter (room temperature)
- 270 g light honey
- Juice of 1 orange
- 125 ml whole milk
- 2 eggs
- 50 g powdered sugar
For the syrup:
- 130 ml Artonic ginger beer
- 120 g sugar
- A few fresh sprigs of lemon thyme for garnish
Preparation:
- Preheat the oven to 180°C (350°F).
- Grease and line the cake pan.
- In a small bowl, mix the flour, baking powder, baking soda, ginger, cardamom, and orange zest.
- In a larger bowl, mix the rest of the ingredients until smooth, then slowly add the flour mixture until just combined.
- Bake for 22 minutes (test with a skewer; if it comes out clean, they are cooked).
- Let cool in the molds for 10 minutes before removing.
For the syrup:
- Heat the Artonic ginger beer with the sugar in a small saucepan until the sugar has dissolved and the liquid has reduced slightly.
- Pour over the cake and decorate with sprigs of lemon thyme.
